A nutritious & savory soup that is perfect for anytime of the year.
Prep Time: 20 minutes | Cook Time: 30 Minutes
Ingredients:
Leafy Green Mix:
- 1 bunch watercress
- 1 bunch spinach
- 1 bunch mustard green
- 1 bunch collard green
- 1 bunch kale
- 1 bunch Chard green
- 1 bunch beet greens
- 1 bunch sweet potato greens
Prep: Chop all the greens together, wash & drain.
Seasonings & Aromatics:
1 white onion minced
3 tbsp. crushed garlic divided
1 tbsp. grated ginger
1 tsp each of oregano, sage, dill, basil, parsley, thyme, fenugreek seed, Rosemary, Dill, Mint (Place in a cheese cloth bouquet garni)
Oil & Broth:
2 tbsp olive oil or coconut oil
12 cups of organic chicken broth or plain water (Note if using chicken broth do not add any salt)
Cooking Directions:
Heat oil until just warm (about medium), add onion and sauté until soft, about 5 minutes. Then add ginger and half the garlic (1.5 tbs), sauté for 2 minutes. Add greens next, sauté for 5 minutes, then add water or broth and bring to a boil. Add the herbal mix in the cheese cloth, and the rest of the garlic ( and cook for 15-20 minutes.
Add Salt & Pepper to taste or even Cayenne pepper for a little kick!
